I’m a teacher, a traveler, and someone who went to Italy looking for truffle honey and came home completely changed.
The Teaching Part
Almost 25 years in the classroom will do something to you. It taught me to see everything as a learning opportunity — how can we make this fun? How does this connect to something bigger? That curiosity never goes away. It just finds new places to live.
On a trip to Italy, I wandered into a little shop and ended up in a conversation with a group of women about olive oil. They were drinking it in shots. I’d never heard of anything like it — but they had the most beautiful skin I’d ever seen.
I came home curious, started researching, and eventually found Olive Tree People. Once I learned what the olive plant actually does, I couldn’t stop talking about it. I still can’t.
I’ve always believed that seeing the world changes you. After years of dreaming about it, I joined a host agency, completed a 14-week training course, and launched Shining Knight Travel. If I’m going to help people go somewhere, I want to really know what I’m talking about.
